What Pizza Wants to Be – Tomato Galette

It’s really getting to be tomato time!

IMG_7523I’ve been making lots of pastas tossed with tomatoes and several varieties of tomato, basil, and mozzarella salad. Often I add whatever extra vegetables are around, and I’ve especially enjoyed adding lots of cucumber to these salads.

tomatoesSometimes I’ll even add garden “weeds” like the nutritional powerhouse purslane. It’s a great way to use up some of this hard-to-avoid garden guest.

IMG_7407But I think I just found a new favorite way to use up some tomatoes – in a tomato galette!

Tomato GaletteInstead of reinventing the wheel with this one, I’m just going to refer you to where I found it originally because it’s pretty perfect as is!  The only changes I made were that I added garlic to the top and I didn’t exclusively stick to all cherry tomatoes — I just used what I needed to finish up in my tomato basket.

This recipe was so good it made Mr. LF make the comment that inspired the title: “This is absolutely amazing. This is what pizza wants to be.”
