What Pizza Wants to Be – Tomato Galette

It’s really getting to be tomato time!

IMG_7523I’ve been making lots of pastas tossed with tomatoes and several varieties of tomato, basil, and mozzarella salad. Often I add whatever extra vegetables are around, and I’ve especially enjoyed adding lots of cucumber to these salads.

tomatoesSometimes I’ll even add garden “weeds” like the nutritional powerhouse purslane. It’s a great way to use up some of this hard-to-avoid garden guest.

IMG_7407But I think I just found a new favorite way to use up some tomatoes – in a tomato galette!

Tomato GaletteInstead of reinventing the wheel with this one, I’m just going to refer you to where I found it originally because it’s pretty perfect as is!  The only changes I made were that I added garlic to the top and I didn’t exclusively stick to all cherry tomatoes — I just used what I needed to finish up in my tomato basket.

This recipe was so good it made Mr. LF make the comment that inspired the title: “This is absolutely amazing. This is what pizza wants to be.”

Plus, the Kitchen Vignettes blog where I found this is also amazing! She makes beautiful videos to go along with many of the recipes she posts. They’re really very inspiring.

IMG_7518I served this with a side of our favorite way to eat kale – in a Tuscan kale salad (yum!!).

How are you using up your garden’s tomatoes this year? Have you started making sauce yet?

  1. Hi there, thanks so much for sharing the recipe! 🙂 I’m glad you enjoyed it, it’s really the recipe of my summer, I’ve been making it non-stop. I served this with a kale salad the other too and I agree, they go perfectly together. Lovely blog!
